Snickerdoodles are good cookies. I synthesized this recipe from Joy of Cooking and Cook’s Illustrated. You should bake by weight, it’s fun.
- 300 g all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- ¼ tsp salt
- 300 g sugar
- two sticks unsalted butter (230 g)
- 2 eggs
- cinnamon sugar
Heat oven to 350°F.
Mix together flour, cream of tartar, baking soda, and salt.
Cream together butter and sugar. Add eggs, then slowly incorporate flour mixture, mixing until just incorporated.
Shape dough into balls and roll “tops” in cinnamon sugar.
Bake for 12 to 14 minutes, one tray at a time, until cookies are just collapsing.
